I'm planning on departing from PDX airport on December 12th and would return on January 1st. I keep hearing how it's cheaper to book multiple flights rather than booking round trips but I'm not very knowledgeable of the best options for flying cheap.

You've got lots of options. If you have Star Alliance FF (US, UA, CO) I would go SK - fewest connections. Booking through Expedia you can go on AC to YVR and then on LH to LHR and then on SK to ARN which is 989USD but you use three different airlines and have two layovers. flying SK via EWR is easier but about 100USD more. If you have Skyteam FF (DL) then take KL via AMS - about the same as flying SK. Either SK or KL would be good - just depends on when you want to depart. SK departs early morning, KL in afternoon, and SK arrives early morning, KL in afternoon. Personally, I would fly SK (mainly because I don't like flying DL) and CO isn't too bad.
